Kendy is named after my parents, Ken + Wendy, who got stuck in Reno back in March and stayed for another 7 months to help keep this place going. Seems the least I could do.
We've had two pizzas with prosciutto on our menu since Day One, but both are a bit unusual, what with the whole no tomato sauce thing. So I figured we should add one that has both tomato sauce and prosciutto just to cover our bases. It is pretty similar to a pizza I ate quite a few of in a little cafe in Cannes last year while I was there for the film festival (name drop!).
San Marzano tomato sauce, mozzarella, bake, then add the aforementioned prosciutto, arugula, fresh shaved parmesan cherry tomatoes and, if you choose, a big ol' 4 ounce ball of burrata plopped right in the center. (You should choose.)
